I always have a hard time thinking of what to have as a side dish. I try to avoid rice and too much potato’s with the points being so high, and I am not one for eating vegetables by themselves. These tasty cheese & bacon broccoli bites are a perfect side dish, or make them as an appetizer for your next party. Either way they are sure to please, and only 1 smart point each 🙂

Bacon and cheese broccoli bites

1 sp or 1pp per bite

Ingredients 

  • 3 cups of frozen broccoli
  • 6 slices of bacon, I use Oscar Mayer center cut to keep points low
  • 1/2 cup panko bread crumbs, I use the Japanese style, 1/2 cup based on my label is 3sp
  • 2 T white flour
  • 2/3 cup light, reduced fat grated cheese, I use a 3 cheese blend
  • 2 T finely grated parmesan cheese
  • 1 egg
  • 1 egg white
  • Dash of salt & pepper

Instructions 

  • Preheat oven to 350F, spray a 24 mini muffin pan.
  • Cook your 6 slices of bacon on the stove and set aside. Place frozen broccoli in a microwave safe dish and add 2T water, cover and cook for 5 minutes. Chop broccoli up into very small pieces, you can use a food processor if you wish, I just prefer a knife. Crumble up your cooked bacon. Mix all ingredients together in a bowl.
  • Using a spoon fill a 24 sprayed mini muffin pan with mixture, pat down a bit with your spoon.
  • Bake in oven for 15 minutes, then turn over and bake another 10 minutes. Serve with your favorite dip. 1 sp or 1pp each bite.
  • Nutrtional info, not including broccoli, per bite.. Calories 32... Fat 1.8... Saturated fat 0.3g... Carbs 2.1g... Fiber 0g... Sugars 0.1g... Protein 2.2g

    1. Hi Molly, thank you 🙂 I am not positive on the calories but if I had to guess I would say about 60-70 per 2 bites.. I need to try and start figuring out nutritional info as well as points but it’s vert time consuming 😉

    Hi, I made these last night and they were a total hit, very tasty so thank you for the idea! Just wondering about the points, when I put it into the recipe builder for weight watchers, I’m getting 3 points per bite, I didn’t add bacon to mine because we didn’t happen to have any so I removed that and it still calculated at 2 smartpoints per 1 bite. Just thought I’d mention that b/c I was thinking they were 1.

    1. Hi Julie, I don’t use the WW recipe builder sorry, I have proven it wrong on many occasions!! For example it has 1/2 cup panko as 6sp but the kind I buy, my label tells me 3sp per 1/2 cup.. I use My fitness pal and enter all ingredients to get the nutritional info and I can usually match the exact product 99% of the time.. Feel free to use the recipe builder if you wish.. But that is why some things will be different..

I wanted to add, I have no idea how you got 3sp each.. even if you take a break down of each ingredient (not incl bacon as you say you did not use it) 2/3 shredded light cheese 8sp, 2T parmesan 2sp, egg 2sp, panko (mine is 3sp but lets say 6sp as WW app calls it) flour 2sp, Broccoli and egg white 0sp.. that’s 20 sp and it makes 24 bites… the bacon added 6 sp and my panko was 3sp so you can see where even I got the 1sp each from right?? I always suggest you use labels and do a breakdown in your head of points on all ingredients and divide by yield, WW App is always wrong for me 😉

  4. Hi…sorry!!! I just recalculated and I must have been still asleep when I did it yesterday, you’re totally right, it’s 1 smart point per one bite, I had my servings off! Ahhh, so embarassed! Just so you know, they were delicious and I would have eaten them and made them again even if they were 3 points! Thanks again for the recipe, and thanks for the quick reply, keep up the great work!

    1. Hi Sally sorry for the late reply, I think you can make them bigger, I doubt they would need that much longer in the oven just keep your eye on them 🙂

  9. Hi I made these bacon, cheese broccoli bites today. They were a hit. Enter into WW recipe builder and came out to 1 point. I used center cut bacon, fat free cheddar and the other ingredients listed. I did flip them after 15 minutes as suggested for another 10 minutes. Mini pan size made a decent size bite. Will be making again. Love your recipes!
